In pronouncing Alquimia, stress the second syllable: "al KEE mee-uh." Alquimia Reserva de Don Adolfo extra-anejo was first launched in 2010. It is aged for 6 years, which is quite a bit longer than the normal 3 year aging process customary for the "extra-anejo" label. The aging gives it what they call a "beautiful golden color" and they suggest enjoying as you would a fine cognac: sipping neat in a snifter. In their 2010 write-up, the Beverage Testing Institute said it was "A complex Cognac styled anejo that will go great with cigars." They followed that up in 2012 by suggesting it had a "nice bourbon barrel finish." What's so special about Tequila Alquimia? This family-owned and operated spirit brand is 100% natural, USDA certified organic and is handcrafted using completely sustainable and eco-friendly. All aspects of production maintain a proper balance of the old world and the new—a marriage of alchemy, modern science and Mexican culture. The family patriarch, Dr. Adolfo Murillo, has for more than 20 years been dedicated to eliminating all use of toxic chemicals and helping other ranchers throughout Mexico to subscribe to environmentally responsible growing practices. Tequila Alquimia is made at Grupo Tequilero México [NOM 1468] entirely from organic, estate grown blue agaves on the family ranch in Arandas. The agaves are harvested only when they have reached their peak of quality and ripeness. After harvesting, the agaves are taken to the distillery where they are baked in a stone oven. The agaves are then shredded and allowed to slowly ferment using natural airborne yeasts. The fermented wash—called mosto—is transferred to a stainless steel alembic still where it twice distilled. The range of tequilas is bottled at 40% alcohol (80 proof) and packaged in specially designed bottles made of recycled glass by a family of glass blowers in Tonalá, Jalisco.
