The Glenfiddich distillery has two houses which still ten wash stills and twintg spirit stills are. The twenty-four washbacks of Oregon pine. There are even two mash tuns used here and is used primarily for aging bourbon barrels and about 10% sherry casks. The vessels are repaired in own cooperage and there is also a coppersmith employed to create new and maintain the old stills. Glenfiddich draws its water for the production of whiskey from a water source ie the Robbie Dubh, meaning "Black Robert" and means to cool the condensers are used water from the river Fiddich. About 90% of production is sold as a single malt. Tasting Notes: Colour: gold. Nose: peaty and chocolate with honey and vanilla. Taste: oily, pretty deep, warm aromas and fruity (pear), spicy and light shades of chocolate with a recurring warm spicy finish. The richly layered Glenfiddich 15 Year Old single malt Scotch whisky is innovatively matured in three types of oak cask: sherry, bourbon and new oak, before being married in thier unique, handcrafted Oregon pine Solera vat. Year on year, this Solera vat is never emptied but is always kept at least half full creating a deliciously harmonious and intense whisky which gets more complex and intriguing every year.
